Ingredients (Serves 2)

- 1 cup (about 200g) Yutaka Sushi Rice
- 2 tbsp Kong Yen Sushi Vinegar
- 1 tbsp Yamasa Dark Soy Sauce
- 1 tsp Kikkoman Toasted Sesame Oil
Fresh ingredients:
- 150–200g cooked prawns or sliced sushi-grade salmon or tuna
- 1/2 cucumber, thinly sliced or julienned
- 1/2 avocado, sliced
- 1/2 cup cooked or defrosted edamame
- Optional: Lao Gan Ma Crispy Chilli in Oil, pickled ginger, sesame seeds

Method
- Cook the rice: Rinse the sushi rice thoroughly under cold water until the water runs clear. Cook according to package instructions or using a rice cooker. Once cooked, let it cool slightly.
- Season the rice: While still warm, gently mix the rice with 2 tbsp of Japanese Rice Vinegar. Let it sit and absorb for a few minutes while you prep the toppings.
- Assemble the bowl: Divide the seasoned rice between bowls. Arrange the prawns or salmon, cucumber, avocado, and edamame on top.
- Finish with flavour: Drizzle with Kikkoman Soy Sauce and a touch of Toasted Sesame Oil. Add a spoonful of Crispy Chilli if you like a kick.
