Chilled Soba Noodle Salad Recipe – Light, Nutty & Full of Flavour
Fresh, light, and packed with umami, this chilled soba noodle salad is a perfect go-to for lunch, meal prep, or light dinners. It’s full of texture, tang, and a gentle kick of spice.

Ingredients (Serves 2)
From the Morueats Japanese Cooking Essentials Set:
- 120g Buckwheat Soba Noodles
- 1 tbsp Toasted Sesame Oil
- 1½ tbsp Japanese Rice Vinegar
- ¼–½ tsp Japanese Seven Spice
Other Ingredients:
- 100-150g Protein: Tofu, grilled prawns, or chicken (optional)
- Vegetables: ½ Cucumber, 1 shredded carrot or ½ radish (optional)

Method
- Cook the noodles: Boil soba according to pack, then rinse under cold water.
- Dress the noodles: Toss with 1 tbsp sesame oil and 1–2 tbsp rice vinegar.
- Top: Add sliced veg and protein of your choice.
- Finish: Sprinkle with Japanese seven spice and serve cold.
