Method

  1. Cook the noodles: Boil soba according to pack, then rinse under cold water.
  2. Dress the noodles: Toss with 1 tbsp sesame oil and 1–2 tbsp rice vinegar.
  3. Top: Add sliced veg and protein of your choice.
  4. Finish: Sprinkle with Japanese seven spice and serve cold.
