Step 1: Rinse carefully under cold water. For best results soak in cold water overnight or until soft. Alternatively, soak in warm water for 30 minutes. For immediate use. submerge mushrooms in warm water in a container (with lid), add 2 tsp of sugar, close the lid and shake for a few minutes until soft.

Step 2: Cut mushrooms to a desirable size appropriate for intended use.

Step 3: Cook together with your dish for a minimum of 5 minutes to give a deep and unami rich flavour fragrance.

Did you know - the water used for rehydrating the mushrooms can also be used as stock to add to extra unami to soups. We also use it to add to stir fries when the pan needs a little more water to steam.
